Mmmm… Cornbread. Who doesn’t love warm and delicious homemade cornbread…? With honey butter. My husband and I have been enjoying good homemade honey butter to go along with any types of rolls… and cornbread muffins. We tried honey butter back when we were in college in Idaho. Whenever we went to one of our favorite restaurants there, they would serve the combo with our meals. Oh delicious!
Ingredients
- 1 cup milk
- 1/4 cup butter, melted
- 1 large egg
- 1 1/4 cups yellow cornmeal
- 1 cup all purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butter, room temperature
- 1/4 cup honey
For Cornbread Muffins:

Directions
- Heat oven to 400 degrees F. Grease bottoms only of 12 medium muffin cups with cooking spray. Beat milk, butter and egg in large bowl. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Pour batter into muffin pan about 3/4 cups full.
- Bake about 20 minutes or until golden brown and toothpick inserted in center comes out clean.
- In a small bowl mix butter and honey until smooth. Store, covered, in the refrigerator.
